What to do when your compressor will not build pressure?
My compressor will not shut off and it is supposed to cut off at 150 psi but will only build up to 125 and keeps running.

Assuming that your power train (electric motor / linkage / piston & seals) are in good shape, then your compressor is compressing air and is trying to reach the cut out pressure level but can't.
This suggests that you have a flapper valve failure, or an internal gasket is leaking, bleeding air off as fast as it tries to compress past the 125 PSI level it reaches.
