I suggest you visit the Sizing page on this website which will provide much of the information you seek.

Essentially, you need to find out the CFM and pressure requirements of each of your compressed air using applications, determine how many of them might conceivably run at the same time, total up the flow requirement in CFM, and then base your compressor selection on the total.
