How do you set the cut out switch on a reciprocating comppressor

we use the machine to fill air tanks to charge air guns the tanks are 300 and 200 bar.

The short answer, you don't!

The compressor manufacturer does before they ship the unit. That way the pressure switch settings are appropriate for that particular compressor.

Having said that, you may have a couple of adjusting nuts under the pressure switch cover, and one is for high pressure cut out, and the other for low.

Mess with them at your peril!
