What happens to the oil in the sump of your truck when it's cold? It gets thicker. Same issue with oil in the sump of a compressor.

If your power supply is marginal, or your motor is getting a tad long in the tooth, same for your start capacitor, the compressor may pull too much current when trying to start against the additional load and overload the circuit.
