I just bought the Campbell Hausfeld 3 Gallon, 110psi Air Compressor about two weeks ago and it bleeds down extremely quick when not in use?

Maybe the drain valve isn't closed fully.

Or there is some debris in the o-ring on it, allowing blow-by.

Sometimes opening and then closing it a couple times under pressure will clear it out and let it seal.

Check where the air from the pump enters the tank. There should be (might be?) a fitting there that has an integral check valve. Likely that check valve is leaking.

If you've just acquired the compressor, take it back and get another one. They are not supposed to leak.
